LE CHARLES, THE SCHOOL’S GASTRONOMIQUE TRAINING RESTAURANT
In order to develop a range of service related skills and managerial competencies, Ecole Supérieure d’Hôtellerie de Paris provides students with a real-world working environment in our gastronomic restaurant.
Named Le Charles, in tribute to the great grandfather of the founder of the school, and former team manager of the Presidential train from 1912 to 1929, this excellent training facility is decorated with replicas of menus served on the train. The opening of the restaurant was celebrated with a lunch that recreated a menu from 1888 and was served by first year students.
First year students serve at Le Charles under the supervision of a Senior Researcher trained by the Pourcel brothers, chefs and owners of several restaurants. Students manage the restaurant by filling every position.
Each year, they invite Hospitality representatives for an historical feast, reproducing one of the historic menus.
